Roasted Garlic & Spinach Ricotta Lasagna Rolls

Ingredients
  

9 lasagna noodles

1 head of garlic

2 tablespoons olive oil (divided)

3 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese (plus additional for topping)

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top off the garlic head, exposing the cloves. Drizzle with 1 tablespoon of olive oil, wrap it in aluminum foil, and place it in the oven. Roast for 30-35 minutes, or until the cloves are soft and fragrant. Remove from the oven, allow it to cool slightly, then squeeze the roasted garlic cloves into a bowl and mash them with a fork until smooth.

        Prepare the Spinach Filling:

          - While the garlic is roasting, bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package instructions until al dente. Drain and lay them flat on a clean surface to prevent sticking.

            - In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped spinach and sauté for about 2-3 minutes, or until wilted. Remove from heat and allow it to cool slightly.

              Mix the Cheese Filling:

                - In a mixing bowl, combine the mashed roasted garlic, ricotta cheese, half of the mozzarella cheese, grated Parmesan cheese, egg, dried oregano, salt, and black pepper. Stir until all ingredients are well blended. Gently fold in the cooked spinach until evenly incorporated.

                  Assemble the Lasagna Rolls:

                    - Spread 1 cup of marinara sauce evenly across the bottom of a 9x13 inch baking dish.

                      - Take a lasagna noodle and lay it flat on a clean work surface. Place about 2-3 tablespoons of the cheese and spinach filling at one end of the noodle. Roll the noodle tightly starting from the filled end and place it seam-side down in the prepared baking dish. Repeat this process with the remaining noodles and filling.

                        Top and Bake:

                          - Pour the remaining marinara sauce over the assembled lasagna rolls and sprinkle the extra mozzarella cheese on top.

                            - Cover the dish with aluminum foil to prevent drying and bake in the preheated oven for 25 minutes. After this time, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                              Serve:

                                - Once baked, allow the lasagna rolls to cool for a few minutes before serving to set. Garnish with fresh basil leaves if desired for a pop of color and added flavor.
