1 whole head of garlic

2 tablespoons olive oil, plus additional for drizzling

1 pound cremini mushrooms, sliced

1 teaspoon fresh thyme leaves

1 teaspoon fresh rosemary, finely chopped

Salt and freshly ground black pepper, to taste

8 ounces store-bought or homemade flatbread

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

Red pepper flakes (optional, for garnish)

Roast the Garlic: Preheat your oven to 400°F (200°C). Carefully slice the top off the entire head of garlic, making sure to expose the tips of the cloves. Drizzle with olive oil, ensuring it's well-coated, then wrap the garlic tightly in aluminum foil. Roast in the oven for 30-35 minutes, or until the cloves become soft and golden. Allow to cool slightly, then squeeze each clove into a bowl and mash into a smooth paste.

    Sauté the Mushrooms: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced cremini mushrooms along with the thyme, rosemary, salt, and pepper.
