Ingredients

2 ripe avocados

1 cup fresh corn kernels (or frozen corn, thawed)

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon fresh lime juice

1 teaspoon honey (optional, for a touch of sweetness)

4 slices of whole-grain bread

1 small red onion, thinly sliced

Fresh cilantro or parsley, chopped for garnish

Crushed red pepper flakes (optional, for added heat)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to prepare for roasting the corn.

Roast the Corn: In a mixing bowl, combine the fresh (or thawed) corn kernels with olive oil, smoked paprika, salt, and pepper. Toss until the corn is evenly coated. Pour the mixture onto a baking sheet in a single layer and roast in the preheated oven for 15-20 minutes, or until the corn is golden brown and slightly charred. Stir the corn halfway through the roasting time to ensure even caramelization.

Prepare the Avocado: While the corn is roasting, cut the avocados in half and remove the pits. Use a spoon to scoop the flesh into a medium bowl. Add fresh lime juice, and season with salt and pepper to taste. Mash the avocado with a fork until you achieve your desired consistency—smooth and creamy or a bit chunky.

Toast the Bread: Toast the slices of whole-grain bread in a toaster or on a skillet until they are golden brown and crispy, which should take about 3-5 minutes depending on the method used.

Assemble the Toast: After removing the roasted corn from the oven, allow it to cool for a couple of minutes. Generously spread the mashed avocado over each slice of warm, toasted bread.

Layer the Toppings: Top each avocado spread with a generous amount of roasted corn. Then, sprinkle the thinly sliced red onion on top. For a hint of sweetness, drizzle a small amount of honey over the toppings, or if you prefer some heat, sprinkle crushed red pepper flakes.

Garnish and Serve: Finish your creation with freshly chopped cilantro or parsley for a pop of color and freshness. Serve immediately to relish the contrast of warm and cool flavors.
