1 lb (450 g) chicken breast, cut into 1-inch cubes

1 cup buttermilk

2 tablespoons ranch seasoning mix

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped (plus extra for garnish)

1 tablespoon olive oil

1 teaspoon black pepper

1 teaspoon salt

1/2 teaspoon red pepper flakes (optional, for added heat)

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes before using)

Marinate the Chicken: In a large mixing bowl, whisk together the buttermilk, ranch seasoning mix, minced garlic, black pepper, salt, and red pepper flakes (if desired). Add the chicken cubes to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight, to enhance the flavor.

    Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. Meanwhile, preheat your grill or grill pan over medium heat until hot.

      Assemble the Skewers: In a separate small bowl, combine the grated Parmesan cheese and chopped parsley. Remove the marinated chicken from the refrigerator. Carefully thread the marinated chicken cubes onto the skewers, leaving a small gap between each piece to allow for even cooking.
