Ingredients

1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 packet taco seasoning (or homemade: 1 tsp chili powder, 1 tsp cumin, 1 tsp paprika, ½ tsp onion powder, ½ tsp garlic powder, salt, and pepper to taste)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned; drained)

1 head of romaine lettuce or butter lettuce (for wraps)

1 cup diced tomatoes

1 avocado, sliced

½ cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Sauté the Base: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and minced garlic. Sauté the mixture for about 2-3 minutes until the onion becomes translucent and fragrant.

Cook the Turkey: Increase the heat slightly and add the ground turkey to the skillet. Use a spatula to break it up into smaller pieces. Cook for about 5-7 minutes, stirring occasionally, until the turkey is browned and no longer pink.

Flavor It Up: Add the diced bell pepper to the skillet along with the taco seasoning. If you're using homemade seasoning, mix together the spices in a small bowl first, then add them to the skillet. Stir everything well and sauté for an additional 3-4 minutes until the bell pepper is tender and the flavors meld together.

Add Beans and Corn: Gently fold in the rinsed and drained black beans and corn. Allow the mixture to heat through for an additional 2-3 minutes, stirring occasionally. Taste the filling and adjust the seasoning with salt and pepper as desired.

Prepare Lettuce Wraps: While the turkey mixture is cooking, carefully separate the leaves of the romaine or butter lettuce. Rinse each leaf under cold water and pat them dry with a paper towel. These will serve as the wraps for your taco filling.

Assemble: Once the turkey mixture is fully cooked, take a generous spoonful of it and place it into each lettuce leaf. Top the filling with diced tomatoes, slices of avocado, a sprinkle of shredded cheese, and a handful of freshly chopped cilantro for a burst of flavor.

Serve: Arrange the filled lettuce wraps on a serving platter and provide lime wedges on the side. Encourage everyone to squeeze fresh lime juice over their wraps right before taking a bite to add a refreshing zesty kick!
