Ingredients

1 lb (450g) large shrimp, peeled and deveined

1 cup uncooked jasmine or basmati rice

1 cup water or low-sodium chicken broth

1/4 cup teriyaki sauce

2 tablespoons soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 cup bell pepper, thinly sliced (any color)

1/2 cup broccoli florets

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Salt and pepper, to taste

Instructions

Cook the Rice: In a medium saucepan, combine the uncooked rice and water or chicken broth. Bring the mixture to a rolling boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for approximately 15 minutes or until the rice is tender and all the liquid has been absorbed. Afterward, remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to steam the rice.

Prepare the Shrimp: While the rice is cooking, heat the sesame oil in a large skillet or wok over medium heat. Once hot, add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant and golden, being careful not to burn them.

Cook the Shrimp: Add the peeled and deveined shrimp to the skillet. Season with salt and pepper to taste. Cook the shrimp for about 3-4 minutes, stirring occasionally, until they are pink and opaque, ensuring they are cooked through.

Add Vegetables: Incorporate the sliced bell pepper and broccoli florets into the skillet. Pour in both the teriyaki sauce and soy sauce, stirring well to ensure everything is evenly coated. Continue to stir-fry the mixture for another 3-4 minutes, allowing the vegetables to soften slightly while ensuring everything is heated through.

Combine & Serve: Once the rice is ready, fluff it using a fork to separate the grains. Spoon the cooked rice into individual bowls, generously topping each bowl with the teriyaki shrimp and vegetable mixture.

Garnish: Finally, sprinkle sliced green onions and sesame seeds over the top of each bowl for added flavor and visual appeal. Serve the dishes immediately and relish your quick and delicious teriyaki shrimp and rice bowl!
