Ingredients

2 salmon fillets (approximately 6 oz each)

1/4 cup teriyaki sauce

1 tablespoon olive oil

1 bell pepper (choose red or yellow), sliced into strips

1 cup fresh snap peas, trimmed

1 medium zucchini, sliced into half-moons

1 large carrot, julienned

2 cloves garlic, minced

1 teaspoon freshly grated ginger

Salt and pepper, to taste

1 tablespoon sesame seeds (for garnish)

2 green onions, finely chopped (for garnish)

Instructions

Marinate the Salmon:

    - In a shallow dish, pour the teriyaki sauce over the salmon fillets, ensuring they are evenly coated. Cover the dish and let the salmon marinate in the refrigerator for 15-20 minutes to enhance the flavor.

      Prepare the Vegetables:

        - While the salmon marinates, wash and prepare your vegetables. Slice the bell pepper and zucchini, julienne the carrot, and trim the ends of the snap peas. Keep them handy for quick cooking.

          Sauté the Vegetables:

            - Heat the olive oil in a large skillet over medium-high heat. Once hot, add the minced garlic and freshly grated ginger, sautéing for about 30 seconds until fragrant.

              - Add the sliced bell pepper, snap peas, zucchini, and carrot to the skillet. Season with salt and pepper to your liking. Sauté the vegetables for 4-5 minutes until they are tender yet retain a slight crunch. Remove the skillet from heat and transfer the sautéed veggies to a serving dish.

                Cook the Salmon:

                  - In the same skillet, if needed, add a little extra olive oil and increase the heat to medium-high. Once hot, carefully add the marinated salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy. Gently flip the fillets and continue to cook for an additional 2-3 minutes, or until the salmon is cooked through and can be easily flaked with a fork.

                    Serve:

                      - To serve, arrange the vibrant sautéed vegetables on each plate and place the cooked teriyaki salmon on top. Drizzle any remaining teriyaki sauce from the skillet over the salmon. Finish with a sprinkle of sesame seeds and a scattering of chopped green onions for a fresh garnish.

                        Enjoy:

                          - Serve immediately, pairing with your choice of cooked rice or quinoa for a complete meal. Dive into this colorful and flavor-packed dish!
