1 cup canned chickpeas, thoroughly drained and rinsed

1 cup canned black beans, thoroughly drained and rinsed

1 cup cherry tomatoes, halved

1 small red bell pepper, diced into small pieces

1 small cucumber, diced

1/4 red onion, finely chopped

1 ripe avocado, diced just before serving

1/4 cup fresh parsley, finely chopped

1/4 cup high-quality olive oil

2 tablespoons apple cider vinegar

1 teaspoon Dijon mustard

Salt and freshly ground black pepper, to taste

Juice of 1 lime

1 teaspoon ground cumin (optional for extra warmth)

Crumbled feta cheese, for garnish (optional)

Instructions
 

In a large mixing bowl, add the drained and rinsed chickpeas and black beans. Then, gently fold in the halved cherry tomatoes, diced red bell pepper, diced cucumber, and finely chopped red onion. Toss these ingredients together using a spatula or spoon until well mixed.

    In a separate small bowl, combine the olive oil, apple cider vinegar, Dijon mustard, lime juice, and cumin (if using). Whisk these ingredients vigorously until the dressing is smooth and well emulsified.

      Drizzle the dressing over the bean mixture in the larger bowl. Carefully toss all ingredients together to ensure everything is evenly coated with the dressing.

        Just before serving, gently fold in the diced avocado and finely chopped parsley, being careful not to mash the avocado.
