Ingredients

1 lb large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

1 lemon (zest and juice)

2 tablespoons olive oil

1 teaspoon red pepper flakes (adjust based on your spice preference)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cooked rice or quinoa (for serving)

Instructions

Prepare the Ingredients: Rinse the shrimp under cold water and gently pat them dry with a paper towel. For the asparagus, use your hands to snap off the woody ends and then cut the remaining stalks into 2-inch pieces. Zest the lemon until you have about 1 teaspoon, then juice it until you yield approximately 2 tablespoons of lemon juice.

Sauté the Asparagus: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus pieces and sauté them for 3 to 4 minutes, or until they are vibrant green and tender-crisp. Season the asparagus lightly with salt and pepper to taste. Once cooked, remove them from the skillet and set aside.

Cook the Shrimp: In the same skillet, pour in the remaining tablespoon of olive oil. Once it is heated, add the minced garlic and sauté for about 30 seconds, or until it becomes fragrant and slightly golden. Next, add the shrimp to the skillet along with the red pepper flakes and a pinch of salt and pepper. Cook the shrimp for 2 to 3 minutes on each side, or until they turn pink and opaque.

Combine Flavors: Integrate the cooked asparagus back into the skillet with the shrimp. Pour in the freshly squeezed lemon juice and sprinkle the lemon zest over the mixture. Toss everything together gently to ensure the shrimp and asparagus are evenly coated in the bright sauce. Allow it to cook for an additional minute to let the flavors meld beautifully.

Serve: Remove the skillet from the heat and generously garnish your dish with freshly chopped parsley. Serve immediately over a bed of warm cooked rice or quinoa for a nourishing and colorful meal. Savor your vibrant and zesty dish!
