1 can (14 oz) coconut milk

2 tablespoons curry powder

1 teaspoon ground cumin

1 teaspoon ground turmeric

1 tablespoon olive oil

Salt and black pepper, to taste

1 cup cooked rice (white or brown)

Fresh cilantro leaves, for garnish (optional)

Heat the Olive Oil: In a large skillet, place the olive oil and warm it over medium heat. Once hot, add the diced onion and sauté for approximately 5 minutes, or until the onion becomes translucent and soft.
