1 can (15 oz) black beans, rinsed and drained

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 cup corn (can be fresh, frozen, or canned)

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and black pepper, to taste

4 large whole wheat or spinach tortillas

Optional: 1/2 cup shredded cheese (cheddar or feta), hot sauce, or Greek yogurt for topping

Prepare the Mixture: In a large mixing bowl, combine the rinsed black beans, diced avocado, halved cherry tomatoes, corn, finely chopped red onion, and chopped cilantro.
