2 boneless, skinless chicken breasts

1 cup canned pumpkin puree

1 cup low-sodium chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons fresh sage, finely chopped (or 1 tablespoon dried sage)

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

1 cup heavy cream

2 tablespoons olive oil

Salt and freshly cracked black pepper to taste

Prep the Chicken: Season both sides of the chicken breasts with salt and freshly cracked black pepper to enhance flavor. Set aside to allow the seasoning to penetrate the meat.

    Sear the Chicken: In a large, heavy-bottomed skillet, heat the olive oil over medium heat until shimmering. Carefully add the seasoned chicken breasts to the skillet. Sear for about 5-7 minutes on each side, or until they develop a golden-brown crust. Once seared, remove the chicken from the skillet and set aside on a plate.

      Sauté Aromatics: In the same skillet, add the finely chopped onion. Sauté for approximately 3-4 minutes until the onions turn translucent and fragrant. Add the minced garlic to the skillet and sauté for another minute, stirring constantly to prevent burning.

        Make the Sauce: Pour in the pumpkin puree and chicken broth, stirring to combine with the sautéed onions and garlic. Add the chopped fresh sage, ground cinnamon, and nutmeg. Mix well, allowing the sauce to simmer for about 3-5 minutes, which will help meld the flavors together beautifully.
