Ingredients

1 lb (450g) large shrimp, peeled and deveined

1 cup fresh pineapple, cut into bite-sized chunks

1 red bell pepper, cut into uniform squares

1 red onion, cut into sizable chunks

2 tablespoons honey

3 tablespoons soy sauce

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon fresh lime juice

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (optional, for a spicy kick)

Salt and black pepper, to taste

Skewers (if using wooden skewers, soak in water for 30 minutes before grilling)

Instructions

Marinate the Shrimp: In a large mixing bowl, combine honey, soy sauce, minced garlic, grated ginger, fresh lime juice, sesame oil, red pepper flakes (if using), salt, and black pepper. Whisk until well mixed. Add the peeled and deveined shrimp to the bowl, ensuring they are thoroughly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the shrimp to soak up the flavors.

Prepare the Skewers: If you opted for wooden skewers, ensure they have been soaked in water to prevent burning on the grill. Carefully thread the marinated shrimp, fresh pineapple chunks, red bell pepper squares, and onion chunks onto the skewers, alternating the ingredients to create a visually appealing pattern.

Preheat the Grill: Preheat your grill to a medium-high temperature, aiming for around 375°F to 400°F (190°C to 200°C).

Grill the Skewers: Place the assembled skewers on the grill. Cook them for 3-4 minutes on each side or until the shrimp turn a lovely pink color and are fully cooked, while the pineapple begins to develop caramelized grill marks. Remember to turn the skewers occasionally to promote even cooking.

Serve: Once grilled to perfection, carefully remove the skewers from the grill using tongs. Present them hot on a serving platter, garnishing with a sprinkle of freshly chopped cilantro or parsley for an extra pop of color and flavor. Include lime wedges on the side for guests to squeeze over the skewers.

Enjoy: Indulge in these vibrant, tropical skewers that deliver a delightful explosion of flavors with each bite!
