Ingredients

For the Meatballs:

1 lb (450g) ground beef or ground turkey

1/2 cup breadcrumbs

1/4 cup finely grated Parmesan cheese

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

1 tablespoon soy sauce

1 teaspoon Worcestershire sauce

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 teaspoon crushed red pepper flakes (optional for a spicy kick)

For the Pineapple BBQ Sauce:

1 cup crushed pineapple, drained (reserve juice)

1 cup barbecue sauce (choose your favorite brand)

2 tablespoons honey

1 tablespoon soy sauce

1 teaspoon ground ginger

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

Instructions

Preheat the Oven: Set your oven temperature to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground meat, breadcrumbs, grated Parmesan, chopped onion, minced garlic, egg, soy sauce, Worcestershire sauce, black pepper, salt, and crushed red pepper flakes (if using). Mix thoroughly with your hands or a spatula until all ingredients are combined, ensuring not to overmix as this can make the meatballs tough.

Shape the Meatballs: With your hands, portion the mixture into 1-inch meatballs. Place each meatball onto the prepared baking sheet, spacing them about an inch apart.

Bake the Meatballs: Bake in the preheated oven for approximately 20 minutes, or until they are golden brown and reach an internal temperature of 165°F (74°C).

Prepare the Pineapple BBQ Sauce: While the meatballs are baking, heat a small saucepan over medium heat. Combine the drained crushed pineapple (along with the reserved juice), barbecue sauce, honey, soy sauce, ground ginger, garlic powder, and black pepper. Stir the mixture well and bring it to a gentle simmer. Cook for about 5-7 minutes or until the flavors meld and the sauce thickens slightly.

Coat the Meatballs with Sauce: Once the meatballs are cooked, transfer them to a large mixing bowl or a skillet. Pour the warm Pineapple BBQ sauce over the meatballs and gently toss to coat evenly.

Serve and Enjoy: Serve the meatballs warm either as an appetizer or as a main dish over rice for a delightful meal. Enhance the dish's freshness by garnishing with chopped green onions or fresh cilantro. Enjoy this tropical feast!
