2 ripe pears, thinly sliced (Bosc or Anjou recommended)

1 cup fresh blueberries

¼ cup granulated sugar (adjust to your taste preference)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch (for thickening)

½ teaspoon ground cinnamon

A pinch of salt

For assembly:

1 egg, beaten (for egg wash)

1 tablespoon turbinado sugar (for a crunchy topping)

Prepare the Dough: In a spacious bowl, whisk together the flour, salt, and sugar until well combined. Add the cold cubed butter, and using a pastry cutter or your fingertips, work it into the flour mixture until it resembles small pea-sized crumbles. Gradually add ice water, one tablespoon at a time, mixing gently until the dough starts to come together. Form the dough into a disk, wrap it tightly in plastic wrap, and refrigerate for a minimum of 1 hour to chill.

    Make the Filling: In a medium mixing bowl, add the thinly sliced pears and fresh blueberries. Pour in the sugar, lemon juice, vanilla extract, cornstarch, ground cinnamon, and a pinch of salt. Gently toss the mixture with your hands or a spatula until all the fruit is evenly coated. Set the filling aside to allow the flavors to meld together.

      Roll Out the Dough: Preheat your oven to 375°F (190°C). On a floured surface, roll out the chilled dough into a 12-inch circle, ensuring it’s about 1/8 inch thick. Carefully transfer the rolled dough onto a baking sheet lined with parchment paper.
