Ingredients

1 ½ cups rolled oats

1 cup crispy rice cereal

½ cup unsweetened peanut butter

½ cup honey

¼ cup brown sugar, packed

½ teaspoon vanilla extract

½ teaspoon ground cinnamon (optional)

¼ teaspoon salt

½ cup mini chocolate chips (optional)

½ cup chopped nuts or seeds (optional, for added crunch)

Instructions

Prepare the Baking Dish: Begin by lining an 8x8 inch baking dish with parchment paper, allowing some excess paper to hang over the edges for easier removal later. Lightly grease the parchment with coconut oil or a cooking spray to prevent sticking.

Mix Dry Ingredients: In a large mixing bowl, thoroughly combine the rolled oats and crispy rice cereal. If you choose to add chopped nuts or seeds for additional texture and flavor, incorporate them into the mix at this time.

Heat Wet Ingredients: In a small saucepan, over medium-low heat, combine the peanut butter, honey, and brown sugar. Stir the mixture continuously for about 3 to 5 minutes, until it is completely smooth and well blended. Remove the saucepan from the heat and stir in the vanilla extract, ground cinnamon (if using), and salt until evenly mixed.

Combine Mixtures: Carefully pour the warm peanut butter mixture over the dry ingredients in the bowl. Using a spatula, mix well until the dry ingredients are fully coated with the peanut butter mixture. If you opted for mini chocolate chips, fold them in at this stage.

Transfer to Baking Dish: Once combined, transfer the mixture into your prepared baking dish. Using a spatula or slightly damp hands (to minimize sticking), firmly press the mixture down into the dish to ensure it is evenly distributed and tightly packed.

Chill: Place the baking dish in the refrigerator for at least 1 hour to allow the bars to set properly; this step is essential for achieving a firm and cohesive texture.

Cut into Bars: After chilling, lift the mixture out of the baking dish using the overhanging parchment paper. With a sharp knife, cut the mixture into bars of your preferred size.

Store: To maintain freshness, store the bars in an airtight container at room temperature for up to one week, or refrigerate them to extend their shelf life for up to two weeks.

                  Prep Time: 10 minutes

Total Time: 1 hour 10 minutes

                      Servings: 12 bars

                        - Presentation Tips: For serving, stack the bars neatly on a colorful plate or individually wrap them for a grab-and-go snack option. You can also drizzle a bit of extra honey on top for an appealing shine and additional sweetness.
