1 cup couscous

1 ¼ cups vegetable broth (or water)

2 ripe peaches, diced

1 cup crumbled feta cheese

1 cup cherry tomatoes, halved

½ cucumber, diced

¼ red onion, finely chopped

¼ cup fresh basil, chopped

¼ cup olive oil

2 tablespoons balsamic vinegar

Salt and black pepper, to taste

Optional: ¼ cup toasted almonds for added crunch

Cook the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a vigorous boil. Once boiling, remove the saucepan from the heat. Stir in the couscous, cover the pan with a lid, and let it sit undisturbed for about 5 minutes, allowing the liquid to be fully absorbed. Once ready, fluff the couscous with a fork and spread it out on a plate to cool to room temperature.

    Prepare the Vegetables and Fruits: While the couscous is cooling, thoroughly wash and chop the peaches, cherry tomatoes, cucumber, and red onion. Place all the chopped ingredients into a large mixing bowl for easy combining.
