8 small corn tortillas

1 cup red cabbage, thinly sliced

1 ripe avocado, sliced

½ cup fresh cilantro, roughly chopped

1 lime, cut into wedges

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking.

    Prepare the Cauliflower: In a large mixing bowl, add the cauliflower florets. Drizzle with olive oil, then sprinkle in the smoked paprika, ground cumin, garlic powder, onion powder, salt, and black pepper. Use your hands or a spatula to toss the florets until they are evenly coated with the seasoning mix.

      Roast the Cauliflower: Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Place the baking sheet in the preheated oven and roast for 25-30 minutes, flipping the cauliflower halfway through the cooking time.
