4 boneless, skinless chicken thighs (approximately 1.5 lbs)

2 tablespoons olive oil

Salt and black pepper, to taste

3 cloves garlic, finely minced

1 medium onion, diced

1 cup fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

1 cup heavy cream

½ cup grated Parmesan cheese

Zest of 1 lemon

Fresh basil leaves, for garnish

Prep the Chicken: Begin by seasoning both sides of the chicken thighs generously with salt and black pepper to enhance their flavor.

    Sear the Chicken: In a large, deep skillet, heat the olive oil over medium heat. Once the oil is hot and shimmering, carefully add the seasoned chicken thighs. Sear them for about 5-7 minutes on each side until they are golden brown and cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.

      Sauté Vegetables: Without cleaning the skillet, add the diced onion. Sauté for approximately 3-4 minutes, stirring occasionally, until the onion becomes translucent and slightly softened. Next, add the minced garlic and sauté for an additional minute, or until fragrant.

        Add Spinach and Tomatoes: Incorporate the chopped spinach and halved cherry tomatoes into the skillet. Stir and cook for about 2-3 minutes, allowing the spinach to wilt and the tomatoes to soften slightly.
