1 lb ground beef

1 cup uncooked white rice

2 cups beef broth

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 medium onion, diced

2 cloves garlic, minced

1 cup corn (fresh, frozen, or canned)

2 cups shredded cheese (cheddar or a blend)

1 teaspoon onion powder

1 teaspoon garlic powder

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, chopped, for garnish (optional)

Sauté the Beef: In a large skillet or a deep oven-safe pan, add a drizzle of olive oil and heat it over medium heat. Introduce the diced onion and minced garlic, cooking them for approximately 3-4 minutes or until the onion becomes translucent. Next, add the ground beef, breaking it apart with a spatula. Cook, stirring occasionally, until the beef is browned, about 5-7 minutes. If there’s excess fat, drain it before proceeding.

    Add the Dry Ingredients: Into the skillet, stir in the uncooked rice along with the onion powder, garlic powder, chili powder, cumin, salt, and pepper. Mix thoroughly to ensure the rice is evenly coated with the spices.

      Incorporate the Liquids: Carefully pour in the beef broth, followed by the diced tomatoes (including their juice) and black beans. Stir well to combine all ingredients, then bring the mixture to a gentle boil.
