4 medium-sized bell peppers (your choice of color)

1 cup cooked quinoa

1 lb ground beef (preferably 85% lean)

1 small onion, finely diced

2 cloves garlic, minced

1 cup diced tomatoes (fresh or canned)

1 cup black beans, drained and rinsed

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper, to taste

1 cup shredded cheese (cheddar or mozzarella works great)

1/4 cup fresh cilantro, chopped (for garnish)

1 tablespoon olive oil

1 lime, cut into wedges (for serving)

Prepare the Peppers: Preheat your oven to 375°F (190°C). Slice the tops off each bell pepper and carefully remove the seeds and membranes. Set the peppers upright in a baking dish, ensuring they are stable.

    Cook the Beef: In a large skillet over medium heat, warm the olive oil. Once heated, add the diced onions and minced garlic, stirring for about 2-3 minutes until they become translucent and fragrant. Add the ground beef to the skillet and cook it until it’s browned and fully cooked, breaking it apart with a spatula as it cooks. If there’s excess fat, drain it off.

      Mix the Filling: Once the beef is fully cooked, incorporate the cooked quinoa, diced tomatoes, black beans, ground cumin, smoked paprika, chili powder, salt, and pepper into the skillet.
