Ingredients

For the Base:

200g digestive biscuits, finely crushed

100g unsalted butter, melted

2 tablespoons light brown sugar

For the Caramel Layer:

200g sweetened condensed milk

100g unsalted butter, cut into pieces

100g light brown sugar

1 tablespoon golden syrup (or corn syrup)

For the Chocolate Topping:

200g dark chocolate (70% cocoa or higher), coarsely chopped

50g milk chocolate, coarsely chopped

A pinch of sea salt for optional garnish

Instructions

Make the Base:

    - In a large mixing bowl, combine the finely crushed digestive biscuits, melted butter, and light brown sugar. Stir well until the mixture is evenly combined and has a texture similar to damp sand.

      - Transfer this mixture into a lined 9-inch square baking tin. Press it firmly down using the back of a spoon or your hands to create an even layer. Once done, place the tin in the fridge to chill while you prepare the caramel layer.

        Prepare the Caramel Layer:

          - In a medium saucepan, add the sweetened condensed milk, pieces of butter, light brown sugar, and golden syrup. Stir continuously over low heat until the butter has melted, and the mixture is uniformly combined.

            - Increase the heat slightly and continue stirring for about 5-7 minutes until the caramel thickens and transforms into a rich golden hue. It's essential to keep stirring to prevent it from sticking to the bottom of the pan.

              - Once thickened, remove the saucepan from the heat and pour the caramel carefully over the chilled biscuit base, using a spatula to spread it evenly. Return the tin to the fridge and allow the caramel to set for 1-2 hours.

                Make the Chocolate Topping:

                  - In a heatproof bowl, mix the chopped dark and milk chocolate. Melt the chocolate gently over a pot of simmering water (double boiler method) or heat it in the microwave in 30-second intervals, stirring in between until completely smooth and melted.

                    - Once melted, pour the chocolate over the set caramel layer, using a spatula to ensure an even distribution. For a sophisticated touch, sprinkle a pinch of sea salt over the chocolate.

                      Chill and Serve:

                        - Place the assembled Millionaire's Shortbread back in the fridge for at least 30 more minutes, allowing the chocolate to set fully.

                          - After chilling, carefully lift the shortbread out of the tin by grabbing the sides of the lining. Use a sharp knife to cut the dessert into squares or bars. Serve chilled and enjoy this indulgent treat!

Prep Time: 30 mins | Total Time: 3 hrs | Servings: 16 squares

Presentation Tips: For added flair, consider serving the squares on a wooden board, drizzled with extra chocolate and sprinkled with flaky sea salt to enhance their visual appeal!
