Ingredients

1 lb (450g) ground beef

1 cup mushrooms, finely chopped (such as cremini or button)

1 cup Swiss cheese, shredded

1 medium onion, finely chopped

2 cloves garlic, minced

1/2 cup Italian seasoned breadcrumbs

1/4 cup milk

1 large egg

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley, chopped (optional, for garnish)

1/3 cup ketchup (for topping)

1 tablespoon Dijon mustard (for topping)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it’s ready for baking your meatloaf.

Sauté the Vegetables: In a medium skillet over medium heat, drizzle a teaspoon of olive oil. Once the oil is hot, add the finely chopped onions and minced garlic. Sauté these for about 3-4 minutes until they soften and become translucent. Next, stir in the finely chopped mushrooms and cook for an additional 5-7 minutes. Continue cooking until the mushrooms release their moisture and turn light brown. Remove the skillet from the heat and allow the mixture to cool slightly.

Mix the Ingredients: In a large mixing bowl, add the ground beef, the sautéed mixture of onions and mushrooms, shredded Swiss cheese, breadcrumbs, milk, egg, Worcestershire sauce, thyme, salt, and black pepper. Use your hands or a spoon to mix everything together until well combined. Be careful not to overmix, as this could result in a tough meatloaf.

Shape the Meatloaf: Prepare your baking sheet by lining it with parchment paper or lightly greasing a loaf pan. Transfer the meat mixture onto the sheet or into the pan and shape it into a loaf, ensuring it is evenly formed for uniform cooking.

Prepare the Topping: In a small bowl, mix the ketchup and Dijon mustard together until well combined. Carefully spread this mixture evenly over the top of the meatloaf, creating a tasty glaze.

Bake: Place the meatloaf into the preheated oven and bake for 60-70 minutes, or until the internal temperature reaches a safe 160°F (70°C). Monitor the cooking time as it may vary depending on your oven.

Rest: Once the meatloaf is cooked, remove it from the oven and allow it to rest for about 10-15 minutes. This resting period is crucial as it helps the juices redistribute throughout the meatloaf, making for a moist and flavorful slice.

Serve: After resting, slice the meatloaf into portions and serve warm. For an added touch, garnish with freshly chopped parsley if desired. This savory meatloaf pairs wonderfully with creamy mashed potatoes or a refreshing side salad for a complete meal.
