Ingredients

4 boneless, skinless chicken breasts

1 cup Asiago cheese, freshly grated

2 cups mushrooms (cremini or button), thinly sliced

1 medium onion, finely chopped

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

2 tablespoons extra virgin olive oil

1 tablespoon unsalted butter

1 teaspoon dried thyme

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish

Instructions

Season the Chicken:

    - Lightly season the chicken breasts with salt, black pepper, and dried thyme, ensuring they are evenly coated on both sides.

      Sear the Chicken:

        - In a large skillet, heat the olive oil over medium-high heat. Carefully place the seasoned chicken breasts in the skillet and sear for 5-7 minutes on each side, or until they are golden brown and fully cooked (internal temperature should reach 165°F). Once cooked, remove the chicken from the skillet and set aside to rest.

          Sauté the Vegetables:

            - In the same skillet, add the butter. Once melted, toss in the chopped onion and sauté for about 2-3 minutes until it turns translucent. Add the minced garlic and cook for an additional minute, stirring constantly to avoid burning.

              - Add the sliced mushrooms to the skillet, stirring them into the onion and garlic mixture. Cook for approximately 5-6 minutes until the mushrooms are tender and have released their moisture.

                Prepare the Creamy Sauce:

                  - Pour the chicken broth into the skillet and bring the mixture to a gentle simmer. Allow it to cook for 3-4 minutes to reduce slightly, then stir in the heavy cream. Let this simmer gently for an additional 3-4 minutes to allow it to thicken just a bit.

                    Melt the Asiago:

                      - Gradually stir in the grated Asiago cheese, mixing well until it melts completely and forms a rich, creamy sauce. Taste the sauce and adjust the seasoning with more salt and black pepper if needed.

                        Combine Chicken and Sauce:

                          - Return the seared chicken breasts to the skillet, ensuring they are coated with the creamy mushroom sauce. Allow everything to simmer together for 2-3 minutes to blend the flavors.

                            Serve Your Dish:

                              - Remove the skillet from heat and garnish the dish with a sprinkle of freshly chopped parsley. Serve immediately alongside your choice of pasta, rice, or crusty bread to soak up the delicious sauce.
