Ingredients

4 large flour tortillas

1 cup pizza sauce

1 cup shredded mozzarella cheese

½ cup diced bell peppers (choose a mix of red, green, or yellow for color)

½ cup sliced black olives

½ cup chopped fresh spinach

¼ cup finely chopped red onion

1 tsp dried oregano

1 tsp garlic powder

Olive oil spray (for greasing)

Fresh basil leaves, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This ensures your tortilla cups bake evenly and achieve a perfect crispness.

Prepare the Tortillas: Take each flour tortilla and use a round cookie cutter or a glass rim to cut out circles measuring about 3-4 inches in diameter. Aim to produce around 10-12 mini tortilla rounds to fill your muffin tin.

Shape the Cups: Firmly press each tortilla round into the cups of a muffin tin, gently molding the tortilla to fit the shape of the cup. The edges should form a little border that holds toppings well. Mist the tops lightly with olive oil spray to promote golden browning.

Pre-Bake the Tortillas: Place the muffin tin with the tortilla cups into your preheated oven. Bake for approximately 8-10 minutes, or until the edges are lightly golden and the tortillas start to crisp. Once done, remove them from the oven and set aside.

Assemble the Pizzas: Using a spoon, dollop about 1 tablespoon of pizza sauce into each tortilla cup, spreading it evenly across the bottom. Next, sprinkle a generous layer of shredded mozzarella cheese atop the sauce for that melty goodness.

Add Toppings: Distribute the colorful diced bell peppers, sliced black olives, chopped spinach, and red onion evenly over the cheese layer. For an extra flavor boost, sprinkle the tops with dried oregano and garlic powder.

Bake Again: Return the muffin tin to the oven and bake for an additional 10-12 minutes. The goal here is to have the cheese melted, bubbly, and slightly golden for an enticing appearance.

Garnish: Once out of the oven, allow the tortilla cups to cool for a couple of minutes. If desired, add a few fresh basil leaves on top of each cup for a pop of color and freshness before serving.

Serve: These delightful Mini Veggie Pizza Tortilla Cups are best enjoyed warm. Serve them as a tasty appetizer or a crunchy snack that everyone will love!
