Ingredients

1 can (8 biscuits) refrigerated biscuit dough

1 lb ground beef or ground turkey

1 packet taco seasoning (about 1 oz)

1 cup canned diced tomatoes with green chilies (drained)

1 cup black beans (drained and rinsed)

1 cup corn (frozen or canned, drained)

1½ cups shredded Mexican cheese blend

½ cup salsa

½ cup sour cream (for topping)

¼ cup chopped fresh cilantro (for garnish)

1 small jalapeño (sliced, optional, for garnish)

Cooking spray

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking.

    Prepare the Biscuit Cups:

      - Lightly grease each cup of a muffin tin with cooking spray to prevent sticking.

        - Take each refrigerated biscuit and use your hands to flatten it slightly.

          - Place the flattened biscuit into each muffin cup, pushing it down along the bottom and up the sides to form a cup shape.

            Cook the Meat Filling:

              - In a large skillet, cook the ground beef or turkey over medium heat. Stir often and cook until the meat is browned and thoroughly cooked, draining any excess fat.

                - Once the meat is cooked, add in the taco seasoning packet, drained diced tomatoes, black beans, and corn. Mix well and continue cooking for an additional 5-7 minutes, stirring occasionally, until heated through.

                  Assemble the Biscuit Cups:

                    - Evenly spoon about 2 tablespoons of the meat mixture into each of the biscuit cups.

                      - Top each filled cup with a generous sprinkle of the shredded Mexican cheese blend.

                        Bake the Cups:

                          - Carefully place the muffin tin into the preheated oven. Bake for 15-18 minutes or until the biscuit edges are golden brown and the cheese is melted and bubbly.

Serve the Mini Taco Lasagna Cups:

                              - Once baked, carefully remove the muffin tin from the oven and let the cups cool for a few minutes.

                                - Run a small knife around the edges of the cups to loosen them, then gently lift each taco lasagna biscuit cup from the tin.

                                  - Serve warm, topping each cup with a dollop of sour cream, a spoonful of salsa, and garnish with chopped cilantro and jalapeño slices if desired.

Enjoy: Relish the vibrant flavors of your delicious Mini Taco Lasagna Biscuit Cups!
