1 cup fresh sweet corn kernels (approximately 2 ears)

1 medium zucchini, grated and excess moisture squeezed out

1/2 cup all-purpose flour (or gluten-free flour for a gluten-free option)

1/4 cup cornmeal

2 large eggs

1/4 cup grated Parmesan cheese (optional for an added richness)

2 green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

2 tablespoons chopped fresh parsley or cilantro for a burst of freshness

1/4 cup milk (or plant-based milk for a dairy-free alternative)

Oil for frying (olive oil or vegetable oil)

Start by preparing your ingredients. In a large mixing bowl, combine the fresh sweet corn kernels and the grated zucchini. Make sure to squeeze out any excess moisture from the zucchini to prevent soggy fritters.

    To the corn and zucchini mixture, add in the all-purpose flour, cornmeal, eggs, and milk. Mix together until just combined; be cautious not to overmix, as this can lead to dense fritters.

      Next, fold in the grated Parmesan cheese (if using), finely chopped green onions, garlic powder, onion powder, smoked paprika, and season with salt and pepper to taste. Finally, add the fresh herbs and gently stir the mixture to combine everything uniformly.

        Heat a non-stick skillet over medium heat and pour enough oil into the skillet to coat the bottom evenly. Allow the oil to heat up until shimmering.

          Once the oil is hot, use a tablespoon to scoop out portions of the fritter batter and carefully drop them into the skillet. Flatten each one gently with the back of the spoon to form a small patty.

            Fry the fritters for about 3-4 minutes on one side, or until they are golden brown and crispy. Flip them over and cook for an additional 3-4 minutes on the other side. Keep an eye on the heat, adjusting it as necessary to ensure they don’t burn.

              Once cooked, remove the fritters from the skillet and transfer them to a plate lined with paper towels to absorb excess oil.

                Continue frying the remainder of the batter, adding more oil to the skillet as required.
