Ingredients

2 cups fresh broccoli florets, chopped

1 cup shredded sharp cheddar cheese

6 large eggs

1 cup whole or 2% milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for a hint of heat)

Cooking spray or olive oil for greasing

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Make sure the oven rack is positioned in the center for even baking.

Prepare the Muffin Tin: Grease a 12-cup muffin tin lightly with cooking spray or olive oil. This will help prevent the quiche bites from sticking.

Steam the Broccoli: In a small pot, bring a couple of inches of water to a rolling boil. Place the chopped broccoli florets in a steamer basket above the boiling water (or, alternatively, use a microwave-safe bowl with water and cover). Steam the broccoli for about 3-4 minutes, or until it turns bright green and becomes slightly tender. Drain any excess water and set the broccoli aside to cool.

Whisk Eggs and Milk: In a large mixing bowl, whisk together the eggs and milk until the mixture is smooth and well combined.

Season the Mixture: Add the garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using) to the egg mixture. Stir well to ensure the seasonings are evenly distributed.

Incorporate Cheese and Broccoli: Gently fold in the shredded cheddar cheese and the steamed broccoli into the egg mixture, making sure everything is uniformly mixed.

Fill Muffin Cups: Pour the quiche mixture into the prepared muffin cups, filling each one about two-thirds full. Use a spoon to gently press down on the mixture, ensuring it is well compacted.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes. The quiche bites should puff up and a toothpick inserted into the center should come out clean.

Cool and Serve: Once baked, remove the muffin tin from the oven and allow the quiche bites to cool in the pan for 5 minutes. Carefully run a knife around the edges to loosen them, then pop them out onto a wire cooling rack.

Enjoy: These mini quiches can be served warm or at room temperature. They make for a delightful snack, appetizer, or light meal option!
