To begin crafting your Mini Chicken Taco Ring Bites, you’ll want to focus on perfectly cooking the ground chicken. Start by heating a tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the ground chicken, breaking it apart with a spatula. For a golden brown finish, allow the chicken to cook undisturbed for a few minutes before stirring. This promotes that lovely caramelization which adds depth to the flavor.

Ingredients

1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely diced

2 cloves garlic, minced

1 bell pepper, diced (your choice of red or green)

1 packet (1 oz) taco seasoning

1 can (8 oz) refrigerated crescent roll dough

1 cup shredded cheddar cheese

1 cup diced tomatoes (fresh or canned, drained)

1 jalapeño, thinly sliced (optional, for added heat)

Fresh cilantro, chopped, for garnish

Sour cream and salsa, for dipping

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Line a large baking sheet with parchment paper to prevent sticking.

Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Once the oil shimmers, add the diced onion and sauté for 2-3 minutes, or until it becomes translucent. Then, introduce the minced garlic and sauté for an additional minute until it releases a fragrant aroma.

Add Chicken and Spices: Incorporate the ground chicken into the skillet and cook for about 5-7 minutes, stirring frequently, until it’s browned and fully cooked. Sprinkle the taco seasoning over the mixture, add in the diced bell pepper, and stir everything together. Continue cooking for another 2-3 minutes until the bell pepper is tender. Remove the skillet from the heat and let the mixture cool slightly.

Prepare the Crescent Dough: Open the can of crescent roll dough and unroll it gently. Separate the dough into triangles. On the prepared baking sheet, arrange the triangles in a circular ring shape, ensuring the wider ends overlap slightly and the pointed ends face outward to create a sunburst appearance.

Assemble the Bites: Spoon the cooked chicken mixture into the center of the crescent ring. Evenly distribute the shredded cheddar cheese and diced tomatoes over the chicken. If you’re using jalapeño slices for extra heat, add those on top as well.

Fold and Seal: Take each pointed end of the crescent dough and carefully fold it over the filling, tucking it underneath the center of the dough to seal the bites. Make sure the filling is completely encased to prevent any spillage during baking.

Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the crescent dough is a glorious golden brown color.

Serve: Once the bites are baked, remove them from the oven and let them cool for a few minutes. Garnish with freshly chopped cilantro. Cut the ring into small “bites” for easy serving. Enjoy with sides of sour cream and salsa for dipping.
