Ingredients

2 whole wheat pita breads

1 cup cooked chicken breast, shredded

1/2 cup marinara sauce

1 cup shredded mozzarella cheese, divided

1/4 cup grated Parmesan cheese

1 tsp dried oregano

1 tsp garlic powder

1/2 tsp red pepper flakes (optional)

Fresh basil leaves, for garnish

Olive oil, for brushing

Salt and pepper, to taste

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C) so it’s ready when you need it.

Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, marinara sauce, half of the mozzarella cheese, grated Parmesan cheese, oregano, garlic powder, and red pepper flakes (if using). Season with salt and pepper to taste. Mix thoroughly until all ingredients are well combined and coated.

Cut the Pita Breads: Carefully take each pita bread and slice it in half horizontally to create two rounds. Gently open each round, creating a pocket for the filling.

Stuff the Pitas: Using a spoon, fill each pita pocket with the chicken mixture. Be sure not to overstuff; the filling should be generous yet easily accommodated within the pocket.

Arrange on a Baking Sheet: Place the stuffed pita halves on a baking sheet lined with parchment paper for easy cleanup. Lightly brush the tops of the pittas with olive oil to give them a nice golden finish while baking.

Add Cheese: Evenly sprinkle the remaining mozzarella cheese on top of each filled pita for delicious cheesiness once baked.

Bake: Transfer the baking sheet to the preheated oven and bake for 12-15 minutes. You want the cheese to melt and bubble, and the edges of the pita to turn crispy.

Garnish and Serve: Once baked, remove the pitas from the oven and allow them to cool for a minute. Garnish with fresh basil leaves for a pop of color and flavor. Cut each pita into triangles and serve warm for a delightful appetizer or meal!
