Mini Chicken Fajita Taco Cones

For the Chicken Fajita Filling:

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper, to taste

1 bell pepper (red, green, or yellow), thinly sliced

1 medium onion, thinly sliced

Juice of 1 lime

For the Taco Cones:

6 small flour tortillas (6-inch size)

Cooking spray or olive oil (for brushing)

Shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Optional toppings: sour cream, guacamole, or salsa

Instructions
 

Prepare the Chicken Fajita Filling:

    - In a large skillet, heat the olive oil over medium-high heat.

      - Add the sliced chicken breast strips, then season with chili powder, ground cumin, garlic powder, salt, and pepper. Sauté for 5-7 minutes until the chicken is fully cooked through and browned.

        - Incorporate the sliced bell pepper and onion into the skillet, stirring them into the chicken. Cook for an additional 3-4 minutes until the peppers and onions are tender and fragrant.

          - Remove the skillet from heat and squeeze fresh lime juice over the chicken and vegetables. Stir well to combine, then set the mixture aside.

            Create the Taco Cones:

              - Preheat your oven to 375°F (190°C).

                - To make the tortillas pliable, place them in the oven for about 10 seconds.

                  - With your hands, carefully shape each tortilla into a cone by overlapping the edges and securing them with a toothpick.

                    - Arrange the cones upright in a muffin tin to maintain their shape while baking. If you don’t have a muffin tin, fashion crumpled aluminum foil into cups to support the cones.

                      - Lightly spray or brush the exterior of each cone with cooking spray or olive oil, then season with a sprinkle of salt.

                        Bake the Taco Cones:

                          - Bake the tortilla cones in the preheated oven for 10-12 minutes, or until they turn lightly golden and crisp.

                            - Once baked, remove from the oven and allow to cool slightly before gently removing the toothpicks.

                              Assemble the Taco Cones:

                                - Take the chicken fajita filling and generously pack it into each taco cone, pressing down slightly to fit.

                                  - Sprinkle shredded cheese on top of the filling, followed by fresh chopped cilantro. Add any additional toppings like sour cream, guacamole, or salsa as desired.
