1 lb shredded cooked chicken (store-bought rotisserie works wonderfully)

1 cup enchilada sauce (use red or green, based on your preference)

1 cup shredded cheese (cheddar or a Mexican blend works best)

1/2 cup diced onions (choose yellow or red for flavor)

1/2 cup diced bell pepper (any color you like adds vibrant flair)

1/4 cup corn kernels (canned or frozen will do)

1/2 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper to taste

12 slider buns or mini brioche buns

1/4 cup fresh cilantro, chopped (for garnish)

Sour cream (for serving on the side)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This ensures the sliders will bake evenly and get perfectly toasty.

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken and enchilada sauce. Add half of the shredded cheese, along with the diced onions, bell peppers, corn, cumin, chili powder, and season with salt and pepper. Stir the mixture thoroughly until every ingredient is well blended.

      Assemble the Sliders: Carefully slice the slider buns in half to create a top and bottom for each. Lay the bottom halves on a baking sheet lined with parchment paper to prevent sticking.

        Fill the Buns: Generously spoon the chicken enchilada mixture onto each bottom bun. Make sure to pack the filling in well to maximize each bite’s flavor!

          Add Cheese and Tops: Evenly distribute the remaining shredded cheese over the filled buns. Place the top halves of the buns on each slider, creating a complete sandwich.

            Bake: Transfer the baking sheet to your preheated oven. Bake for about 15-20 minutes, or until the cheese is melted, bubbly, and the tops of the buns have a light golden color.
