Ingredients

1 lb boneless, skinless chicken thighs

4 oz sliced ham (preferably Black Forest or honey ham)

4 oz Swiss cheese, sliced

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs (preferably seasoned)

1 tsp garlic powder

1 tsp paprika

Salt and pepper, to taste

12 slider buns

½ cup Dijon mustard

½ cup mayonnaise

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken:

    - Preheat your oven to 400°F (200°C).

      - Using a meat mallet, gently pound the chicken thighs to an even thickness of about ¼ inch. Season both sides thoroughly with salt, pepper, garlic powder, and paprika for added flavor.

        Assemble the Chicken Cordon Bleu:

          - Lay each piece of chicken flat, then place one slice of ham and one slice of Swiss cheese on top. Carefully roll the chicken tightly into a log, jelly-roll style. If needed, secure each roll with toothpicks to hold the filling in.

            Bread the Chicken:

              - Create a breading station by arranging three shallow bowls: one filled with flour, one with beaten eggs, and one filled with panko breadcrumbs.

                - Start by dredging each chicken roll in flour, shaking off any excess. Next, dip it into the beaten eggs, ensuring it's well-coated. Finally, roll it in the panko breadcrumbs, pressing lightly to adhere a generous coating.

                  Bake the Chicken:

                    - Place the breaded chicken rolls on a baking sheet lined with parchment paper. For an extra crispy texture, lightly spray the rolls with cooking oil.

                      - Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the exterior turns a golden brown.

                        Prepare the Sliders:

                          - While the chicken is baking, in a small bowl, combine the Dijon mustard and mayonnaise, mixing until smooth.

                            - Slice the slider buns in half and spread the mustard-mayo mixture evenly on both cut sides.

                              Assemble the Sliders:

                                - Once the chicken has finished baking, allow it to rest for a few minutes before carefully removing the toothpicks. Slice each roll into halves or quarters based on your preferred slider size.

                                  - Place a piece of the chicken cordon bleu on the bottom half of each slider bun. Finish by placing the top half of the bun over the chicken.

                                    Garnish and Serve:

                                      - For a burst of color and added freshness, garnish each slider with a sprinkle of chopped fresh parsley. Serve the sliders immediately, paired with your favorite side dishes for a delicious meal!
