For the crust:

1 cup graham cracker crumbs

2 tablespoons granulated sugar

1/2 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

For the cheesecake filling:

8 oz cream cheese, softened to room temperature

1/4 cup granulated sugar

1 teaspoon pure vanilla extract

1 large egg

1/2 cup sour cream

For the apple topping:

1 large apple (preferably Granny Smith or Honeycrisp), peeled, cored, and diced

2 tablespoons unsalted butter

2 tablespoons packed brown sugar

1 teaspoon ground cinnamon

1/4 cup caramel sauce, for drizzling

Instructions
 

Prepare the crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium-sized mixing bowl, combine the graham cracker crumbs, granulated sugar, ground cinnamon, and melted butter. Mix thoroughly until the ingredients are well combined and resemble wet sand.

        - Evenly press the mixture into the bottom of a mini muffin tin to create a firm crust. Bake in the preheated oven for 5 minutes. Remove from the oven and allow to cool while you prepare the filling.

          Make the cheesecake filling:

            - In a mixing bowl, beat the softened cream cheese and granulated sugar together using an electric mixer on medium speed until the mixture is smooth and creamy, about 2-3 minutes.

              - Add in the pure vanilla extract and egg, mixing until just combined. Avoid overmixing. Gently fold in the sour cream with a spatula until the mixture is smooth, and set aside.

                Prepare the apple topping:
