1 cup diced bell peppers (a colorful mix of red and green)

1/2 cup finely chopped onion

8 large eggs

1 cup shredded cheddar cheese (or your favorite cheese)

1/2 cup milk

1 tsp garlic powder

1 tsp ground cumin

1/2 tsp smoked paprika

Salt and pepper, to taste

12 small corn tortillas

Fresh cilantro, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a mini muffin tin by lightly greasing it with cooking spray or a drizzle of olive oil.

    Cook the Sausage: In a large skillet over medium heat, add the ground breakfast sausage. Cook it thoroughly, breaking it apart with a spatula until it's evenly browned. If there's any excess fat, drain it off. Then, add in the diced bell peppers and chopped onion. Sauté this mixture for an additional 3-4 minutes, until the vegetables soften and develop flavor.

      Prepare the Egg Mixture: In a separate bowl, crack the eggs and add the milk, garlic powder, ground cumin, smoked paprika, salt, and pepper. Use a whisk to combine these ingredients until they are fully mixed and frothy.
