Ingredients

1 block (14 oz) firm tofu, drained and pressed

1 cup BBQ sauce (either homemade or your favorite store-bought)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon black pepper

1 head of butter or romaine lettuce, leaves separated, washed, and dried

1 cup shredded carrots

1 cup diced cucumber

2 green onions, finely chopped

Fresh cilantro, for garnish

Optional: Sesame seeds for an added crunch

Instructions

Prepare the Tofu: Begin by crumbling the pressed tofu into small, bite-sized pieces using your hands or a fork. This texture mimics ground meat and will allow the tofu to soak up the BBQ marinade beautifully.

Marinate the Tofu: In a mixing bowl, combine the crumbled tofu with the BBQ sauce, olive oil, smoked paprika, garlic powder, and black pepper. Stir well to ensure the tofu is evenly coated in the marinade. Set aside for at least 15 minutes to let the flavors meld and infuse into the tofu.

Cook the Tofu: Heat a non-stick skillet over medium heat. Once the skillet is hot, add the marinated tofu mixture. Cook for about 8-10 minutes, stirring occasionally to prevent sticking. You want the tofu to become heated through and slightly caramelized. For an extra burst of flavor, add a splash more BBQ sauce during the final minutes of cooking.

Assemble the Lettuce Boats: Take a clean lettuce leaf and place it on a serving plate. Spoon a generous portion of the BBQ tofu mixture into the center of the leaf. Top it off with a handful of shredded carrots, diced cucumber, and finely chopped green onions for added freshness and crunch.

Garnish and Serve: Sprinkle fresh cilantro on top of the filled lettuce boats for an aromatic touch. If desired, add sesame seeds for extra texture. Serve immediately as a vibrant appetizer or a light, satisfying meal.
