1 can (20 oz) young green jackfruit in water or brine, drained and rinsed

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cumin

Salt and pepper, to taste

1 cup mini tortilla chips

1 cup shredded vegan cheese (or regular cheese, if preferred)

1/2 cup diced red onion

1/2 cup diced tomatoes

1/4 cup chopped fresh cilantro, for garnish

1/4 cup sliced jalapeños (optional)

1/4 cup avocado or guacamole (optional for topping)

    - Begin by draining and rinsing the jackfruit thoroughly. Pat it dry with a paper towel. In a medium saucepan, heat the olive oil over medium heat. Once hot, add the jackfruit and use a fork to shred it into small, pulled-like pieces. This mimics the texture of pulled pork.

      Season the Jackfruit:

        - To the shredded jackfruit, stir in the smoked paprika, garlic powder, onion powder, cumin, and salt and pepper to taste. Sauté this mixture for about 5 minutes, ensuring the spices evenly coat the jackfruit and become fragrant.

          Add BBQ Sauce:
