1 lb (450g) boneless, skinless chicken breasts

1/2 cup all-purpose flour

1 large egg

1 cup panko breadcrumbs (for extra crunch)

1/2 cup grated Parmesan cheese

1 cup marinara sauce

1 cup shredded mozzarella cheese

1 tsp Italian seasoning

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

Fresh basil leaves for garnish (optional)

Cooking spray or olive oil spray

Prep the Chicken: Begin by cutting the chicken breasts into bite-sized pieces, aiming for cubes that are about 1-inch in size. In a mixing bowl, season the chicken pieces with salt, pepper, garlic powder, onion powder, and Italian seasoning. This will infuse them with flavor.

    Set Up Breading Station: Create a breading assembly line using three bowls:

      - In the first bowl, add the all-purpose flour.

        - In the second bowl, crack the egg and whisk it lightly until well combined.

          - In the third bowl, mix the panko breadcrumbs with freshly grated Parmesan cheese, ensuring they are evenly distributed.

            Bread the Chicken: Take each piece of seasoned chicken and first coat it in flour, shaking off any excess. Next, dip it into the whisked egg, allowing any surplus egg to drip off.
