Mediterranean Lamb Burgers with Tzatziki

Ingredients
  

1 lb ground lamb

1/4 cup breadcrumbs

1/4 cup finely chopped red onion

2 cloves garlic, minced

1 tbsp fresh parsley, finely chopped

1 tbsp fresh mint, finely chopped

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp smoked paprika

Salt and black pepper, to taste

4 whole wheat burger buns

1 cup arugula or baby spinach

1 medium tomato, sliced

1/2 cucumber, thinly sliced

For the Tzatziki Sauce:

1 cup Greek yogurt

1/2 cucumber, grated and excess moisture pressed out

1 clove garlic, minced

1 tbsp fresh dill, chopped

1 tbsp lemon juice

Salt, to taste

Instructions
 

Prepare the Tzatziki:

    In a medium bowl, combine the Greek yogurt, pressed grated cucumber, minced garlic, chopped dill, lemon juice, and a pinch of salt. Stir thoroughly until all ingredients are well blended. Cover and refrigerate for at least 30 minutes to let the flavors combine and deepen.

      Make the Burger Mixture:

        In a large mixing bowl, add the ground lamb, breadcrumbs, finely chopped red onion, minced garlic, parsley, mint, cumin, coriander, smoked paprika, and season with salt and black pepper. Mix gently with your hands or a spatula until the mixture is evenly combined without overworking the meat.

          Shape the Patties:

            Divide the lamb mixture into 4 equal portions, shaping each one into a patty about 1 inch thick. Use your thumb to create a small indentation in the center of each patty. This helps them keep their shape and ensures even cooking.

              Preheat the Grill or Skillet:

                Heat your grill or a large skillet over medium-high heat. If using a skillet, add a drizzle of olive oil to prevent the patties from sticking.

                  Cook the Patties:

                    Place the patties on the grill or skillet and cook for approximately 5-6 minutes on each side, or until they achieve your preferred doneness. Utilize a meat thermometer to ensure they reach an internal temperature of at least 160°F (71°C) for safety.

                      Toast the Buns:

                        While the burgers are grilling, toast the whole wheat buns on the grill or in a toaster until they are golden brown and slightly crispy, enhancing the overall texture of the burgers.

                          Assemble the Burgers:

                            Start by placing a handful of arugula or baby spinach on the bottom half of each toasted bun. Add one lamb patty on top, followed by a slice of fresh tomato and a few slices of cucumber. Generously top with the chilled tzatziki sauce. Finally, place the top half of the bun to complete each burger.

                              Serve Immediately:
