1 can (15 oz) chickpeas, drained and rinsed

1 large cucumber, diced into bite-sized pieces

1 cup cherry tomatoes, halved

½ red onion, finely chopped

½ bell pepper (red or yellow), diced

¼ cup kalamata olives, pitted and halved

½ cup feta cheese, crumbled into small pieces

¼ cup fresh parsley, chopped

¼ cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Juice of 1 lemon

In a large mixing bowl, combine the drained and rinsed chickpeas, diced cucumber, halved cherry tomatoes, finely chopped red onion, and diced bell pepper. Stir gently to mix the vegetables and chickpeas evenly.

    Add the halved kalamata olives and crumbled feta cheese to the bowl, incorporating them with the other ingredients.

      In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, freshly squeezed lemon juice, salt, and black pepper. This will create a flavorful dressing.
