Mediterranean Chicken Pasta Salad

2 cups rotini or penne pasta

1 lb grilled chicken breast, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon fresh lemon juice

1 teaspoon dried oregano

Salt and pepper, to taste

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the rotini or penne pasta and cook according to the package instructions until al dente, usually about 9-11 minutes. Once cooked, drain the pasta in a colander and rinse with cold water to cool and halt the cooking process. Set aside to allow excess moisture to drain.

    Prepare the Vegetables: In a spacious mixing bowl, combine the halved cherry tomatoes, diced cucumber, finely chopped red onion, and halved Kalamata olives. Add the freshly chopped parsley and basil to the bowl, ensuring an even mix of colors and flavors.

      Mix the Dressing: In a small mixing bowl, whisk together the extra virgin olive oil, red wine vinegar, fresh lemon juice, and dried oregano. Season with a pinch of salt and freshly cracked pepper to taste. Whisk until the dressing is well combined and smooth.

        Combine Ingredients: To the bowl containing the vegetables, add the drained pasta and the diced grilled chicken. Pour the dressing over the top of the mixture. Gently toss everything together using a spatula or large spoon until all components are evenly coated with the dressing.
