Once you’ve prepared your Brussels sprouts and diced apples, it’s time to spread them out on a baking sheet for roasting. Best practices for arranging on the baking sheet include ensuring that the Brussels sprouts are cut side down, which allows for maximum caramelization. This positioning not only helps develop a beautiful golden-brown crust but also enhances the overall flavor of the dish. Make sure to leave some space between the vegetables; overcrowding the baking sheet can lead to steaming instead of roasting, which hinders that desired crispy texture.

Ingredients

1 lb Brussels sprouts, trimmed and halved

2 medium apples (preferably Honeycrisp or Granny Smith), cored and thinly sliced

1/4 cup pure maple syrup

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/2 teaspoon ground cinnamon

1/4 cup pecans, roughly chopped (optional)

2 tablespoons balsamic vinegar

Fresh thyme leaves, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it's hot and ready for roasting.

Prepare the Brussels Sprouts: In a large mixing bowl, combine the halved Brussels sprouts with the olive oil, salt, black pepper, and ground cinnamon. Toss them gently until all the sprouts are evenly coated with the oil and spices.

Incorporate the Apples: Carefully add the thinly sliced apples to the Brussels sprouts. Toss gently to combine, ensuring the apple slices remain relatively intact.

Add the Maple Glaze: Drizzle the pure maple syrup over the Brussels sprouts and apple mixture. With a light touch, toss everything again to ensure a sweet coating on all the ingredients.

Spread on the Baking Sheet: Line a large baking sheet with parchment paper to prevent sticking. Transfer the Brussels sprouts and apple mixture onto the prepared sheet, spreading it out into a single layer for even roasting.

Roast in the Oven: Place the baking sheet in the preheated oven. Roast for 20-25 minutes, stirring the mixture halfway through to allow for even caramelization. The Brussels sprouts should become tender and slightly charred, while the apples should soften beautifully.

Add Pecans for Extra Flavor: If you're using pecans, sprinkle the roughly chopped nuts over the mixture about 5 minutes before the roasting time is complete to allow them to toast and enhance their flavor.

Finish with Balsamic Vinegar: After roasting, take the baking sheet out of the oven and drizzle the balsamic vinegar over the hot mixture. Toss everything lightly again to ensure the vinegar is evenly distributed.

Garnish and Serve: Transfer the delicious mixture to a serving dish. If desired, garnish with fresh thyme leaves for a pop of color and added flavor. Serve warm as a delightful side dish.
