2 tablespoons extra virgin olive oil

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

    Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets, ensuring they are broken down into roughly equal sizes for even cooking.

      Make the Maple Dijon Sauce: In a separate small bowl, whisk together the Dijon mustard, pure maple syrup, extra virgin olive oil, apple cider vinegar, garlic powder, onion powder, smoked paprika (if you're using it), and a pinch of salt and freshly ground black pepper.
