2 ripe mangoes, peeled and chopped into chunks

1 cup full-fat coconut milk (for a rich and creamy texture)

1/2 cup Greek yogurt (or coconut yogurt for a dairy-free alternative)

1/4 cup honey or maple syrup (adjust based on your sweetness preference)

1 teaspoon pure vanilla extract

1 tablespoon freshly squeezed lime juice

A pinch of salt to enhance flavors

Optional: shredded coconut and small fresh mango pieces for added texture and visual appeal

Instructions
 

Prepare the Mango: Place the chopped mangoes into a blender or a food processor. Blend on high speed until the mixture is smooth, but feel free to leave a few small chunks for a delightful texture in your popsicles.

    Mix the Coconut Base: In a separate mixing bowl, combine the coconut milk, Greek yogurt, honey (or maple syrup), vanilla extract, lime juice, and a pinch of salt. Use a whisk to blend the ingredients until they are combined and creamy.

      Combine Mixtures: Gently fold the smooth mango puree into the coconut mixture until fully integrated. If you’re adding shredded coconut or diced fresh mango for extra texture, fold them into the mixture now.

        Fill the Molds: Carefully pour the combined mixture into popsicle molds, leaving a small gap at the top of each mold to allow for expansion during freezing.

          Insert Sticks: If your popsicle molds come with built-in stick holders, insert them now. If not, freeze the mixture for about 1 hour until it starts to set, then carefully insert wooden sticks into the center of each popsicle.

            Freeze: Place the filled molds into the freezer and allow them to freeze completely for at least 6 hours, or until solid.

              Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to remove the popsicles without breaking them.
