8 slices of thick-cut bacon, chopped into bite-sized pieces

1 large onion, diced into small cubes

1 red bell pepper, diced

1 cup baby spinach, roughly chopped

10 large eggs

1 cup whole milk

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and freshly ground black pepper, to taste

1½ cups shredded sharp cheddar cheese

1 cup diced cooked potatoes (or frozen hash browns)

¼ cup fresh chives, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This will ensure it’s hot enough to bake the casserole evenly.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook, stirring occasionally, until the bacon is crispy and browned, about 8-10 minutes. Once cooked, use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain excess grease, leaving the bacon fat in the skillet for added flavor.

      Sauté the Vegetables: In the same skillet with the bacon grease, add the diced onion and red bell pepper. Sauté for about 5-7 minutes, or until the vegetables are soft and fragrant. Next, stir in the chopped spinach and cook for an additional 2 minutes, just until the spinach wilts. Remove the skillet from the heat and set aside.

        Whisk the Eggs: In a large mixing bowl, crack the 10 eggs and add the whole milk, garlic powder, onion powder, and a generous pinch of salt and pepper. Whisk together until the mixture is smooth and well combined.
