Ingredients

4 salmon fillets (6 ounces each)

1 bunch of fresh asparagus (approximately 1 pound), trimmed

4 tablespoons extra virgin olive oil, divided

Zest and juice of 2 large lemons

4 cloves garlic, finely minced

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh dill, finely chopped

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

½ teaspoon red pepper flakes (optional, for a hint of heat)

Instructions

Marinate the Salmon: In a medium-sized bowl, combine 2 tablespoons of olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, chopped dill, salt, black pepper, and red pepper flakes. Mix well to form a marinade. Place the salmon fillets in a shallow dish and coat them thoroughly with the marinade. Cover and let the salmon marinate at room temperature for 20-30 minutes, turning the fillets halfway through for even flavor absorption.

Prepare the Asparagus: While the salmon is marinating, prepare the asparagus by tossing it with the remaining 2 tablespoons of olive oil, along with a generous pinch of salt and freshly ground black pepper. Ensure the asparagus is well-coated and then set it aside.

Preheat the Grill: Get your grill ready by preheating it to medium-high heat. If you’re using a grill pan on the stovetop, heat it over medium-high until it's hot and ready for grilling.

Grill the Salmon: Once the grill is properly heated, reduce the temperature to medium. Place the marinated salmon fillets on the grill, skin side down. Grill each fillet for approximately 4-5 minutes before carefully flipping them using a spatula. Continue to grill for an additional 4-5 minutes, or until the salmon is cooked through (it should flake easily with a fork) and has developed beautiful grill marks.

Grill the Asparagus: In the last few minutes of grilling the salmon, add the seasoned asparagus to the grill. Grill the asparagus for about 3-4 minutes, turning occasionally, until they are tender and have a slight char, indicating they’re perfectly cooked.

Serve: Once done, remove the salmon and asparagus from the grill. Serve the salmon garnished with additional fresh herbs, alongside wedges of lemon for a refreshing squeeze. This dish pairs wonderfully with a side of fluffy quinoa or a light, crisp salad.
