Lemon Herb Grilled Chicken with Asparagus

4 boneless, skinless chicken breasts

1 tablespoon olive oil (plus more for asparagus)

Juice and zest of 2 lemons

3 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 teaspoon salt

1/2 teaspoon black pepper

1 pound fresh asparagus, trimmed

Optional garnish: lemon wedges and fresh parsley for serving

Instructions
 

Create the Marinade: In a medium bowl, combine the olive oil, lemon juice, and lemon zest. Add the minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Whisk everything together until the mixture is well blended.

    Marinate the Chicken: Place the chicken breasts into a large resealable bag or shallow dish. Pour the prepared marinade over the chicken, making sure each breast is evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for a more intense flavor infusion.

      Heat the Grill: Preheat your grill to medium-high heat, aiming for about 400°F (200°C). If you are using a grill pan, warm it over medium heat on the stove.

        Prepare the Asparagus: While the grill is heating up, add the trimmed asparagus to a mixing bowl. Drizzle with a small amount of olive oil and season with a little salt and pepper. Toss to coat evenly.

          Grill the Chicken: Remove the chicken from the marinade, allowing any excess to drip back into the bowl. Place the chicken on the grill, cooking for approximately 6-7 minutes on each side. Aim for an internal temperature of 165°F (75°C) and a nice char on the surface.

            Grill the Asparagus: About 5-6 minutes before the chicken is done, place the prepared asparagus on the grill. Cook while turning occasionally, until the asparagus is tender and has developed a slight char.

              Serving: Once cooked, carefully remove the chicken and asparagus from the grill. Allow the chicken to rest for a few minutes before slicing. Serve the dish decorated with lemon wedges and a sprinkle of fresh parsley if desired.
