8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1/4 cup olive oil, divided

1 tsp red pepper flakes (adjust for spice preference)

Zest of 1 lemon

Juice of 1 lemon

1/2 cup chicken or vegetable broth

1/4 cup fresh parsley, chopped

Salt and freshly cracked black pepper, to taste

Freshly grated Parmesan cheese, for serving

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the linguine or spaghetti and cook according to the package instructions until al dente (usually about 8-10 minutes). Reserve 1 cup of the pasta water, then drain the remaining water and set the pasta aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once the oil is shimmering, add the minced garlic and red pepper flakes. Sauté for about 30 seconds, stirring constantly, until the garlic is fragrant but not browned.

      Add the Shrimp: Increase the heat to medium-high. Carefully place the shrimp in a single layer in the skillet, ensuring they are not overcrowded. Season with salt and pepper. Cook for about 2-3 minutes on each side, or until the shrimp turn a vibrant pink and are opaque. Use a slotted spoon to remove the shrimp from the skillet and transfer them to a plate. Set aside.

        Create the Sauce: In the same skillet, pour in the chicken or vegetable broth, and add the lemon zest and lemon juice. Stir to combine and bring the mixture to a gentle simmer. Let it cook for about 2-3 minutes, allowing the sauce to reduce slightly.

          Combine Pasta and Shrimp: Lower the heat to medium. Add the drained pasta to the skillet, along with the remaining 2 tablespoons of olive oil and the reserved shrimp. Toss everything together gently, drizzling in reserved pasta water a little at a time until your desired saucy consistency is achieved.

            Finish with Fresh Herbs: Stir in the chopped parsley, and taste the dish. Adjust the seasoning with additional salt and freshly cracked black pepper as necessary for the perfect balance.
