1.5 lbs boneless chicken breast, cut into 1-inch cubes

Juice of 2 large lemons (approximately 1/4 cup)

Zest of 1 large lemon

2 tablespoons fresh dill, finely chopped (or 1 tablespoon dried dill)

2 cloves garlic, minced (about 2 teaspoons)

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1 teaspoon smoked paprika (optional, for an extra depth of flavor and color)

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning)
