Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

2 tsp baking powder

½ tsp baking soda

¼ tsp salt

Zest of 1 large lemon

½ cup unsalted butter, melted and slightly cooled

1 large egg

1 tsp pure vanilla extract

⅓ cup buttermilk, at room temperature

1 cup fresh blueberries (frozen blueberries can also be used, but do not thaw)

2 tbsp fresh lemon juice

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Prepare a mini muffin tin by greasing it lightly with non-stick spray or lining it with mini muffin liners for easy removal.

Mix Dry Ingredients: In a medium-sized mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and lemon zest. Whisk these dry ingredients together until they are evenly mixed and free of lumps.

Combine Wet Ingredients: In a large mixing bowl, whisk together the melted butter (make sure it's cooled slightly to prevent cooking the egg), large egg, pure vanilla extract, buttermilk, and fresh lemon juice. Ensure the mixture is smooth and well combined.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet mixture. Using a spatula or wooden spoon, stir gently until just combined. It’s important not to overmix; a few small lumps are perfectly fine and will yield a tender texture.

Fold in Blueberries: Carefully fold in the fresh blueberries, making sure they are evenly distributed throughout the batter while being gentle to prevent them from breaking.

Fill Muffin Tin: Using a small cookie scoop or a spoon, fill each mini muffin cup about two-thirds full with the batter, ensuring an even distribution among the cups.

Bake: Place the filled muffin tin in the preheated oven and bake for 12-15 minutes. The muffins should be lightly golden on top, and a toothpick inserted into the center should come out clean when they are done.

Cool Down: Remove the muffin tin from the oven and allow the bliss bites to cool in the tin for about 5 minutes. Afterward, transfer them to a wire rack to cool completely.

Serve: Once cooled, if desired, dust the muffin bites with powdered sugar for an extra touch of sweetness. Serve warm or at room temperature, and enjoy the delightful zesty flavors of your lemon blueberry bites!

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 24 muffin bites

Presentation Tips: Arrange the bliss bites on a decorative platter or tiered cake stand for a beautiful presentation. Garnish with a few lemon slices or additional fresh blueberries for color and charm.
